Recipe:
800 g KOON Daifuku Premix
1,100 g Boiling water
Shortening (Adding shortening to the dough will help it not stick to the mixing bowl)
Tip: Use a Flat Beater
Instruction
Add 800 g of KOON Daifuku Premix to a stand mixer and add a small amount of shortening.
Measure 1,100 g of water and bring it to a boil. Then pour the boiling water into the mixer turn on the mixer at low speed, and mix for about 7 minutes.
Rest the mixer and then use a spatula to spread the dough. Continue mixing on low speed for 7 minutes until you have smooth and soft daifuku dough.
Let the dough rest until cool and divide the dough into small parts (20 – 25 g) and wrap the filling and fruit.
Dust it with KOON dusting powder.
